Mycotoxins - Mycotoxins are chemical substances produced by a variety of moulds in staple foods such as corn, wheat, rice, and peanuts. These toxins produce illness or death in small animals and in many cases arc carcinogenic. Aspergillus produced by Aspergillus fiavus and by some other moulds are now known to be health hazards, not only for animals but for humans too.
Besides aflatoxins, various other mycotoxins arc also produced by certain moulds. These mycotoxins are produced on rye or rye bread, corn, and other grains by Claviceps purpuria, Penicillium rubrum, Fusarium sporotrichiella and other fungi.
