Alcoholic Beverages

Alcoholic Beverages - These products of alcoholic fermentations originated in spontaneous fermentation processes are of great antiquity. However, it is only in recent years that modern methods of industrial microbiology have been applied to their manufacture. In principle, the production of alcoholic beverages is similar to the production of industrial ethyl alcohol.

These fermentation processes do not suffer competition from synthetics products. This is because the character of the beverage is dependent upon interactions between a variety of biological factors that have not yet been defined in chemical or physical terms

In beverage production refinements are introduced with respect to flavour, aroma, colour, and sanitation that are not necessary in the making of industrial alcohol. The type of beverage produced is determined by the nature of the plant material employed for fermentation. In all these processes the method of preparing the fermentation medium is a factor of prime importance.
