Ethanol
Fermentations -
In
alcoholic
fermentation,
pyruvate
is
first
activated,
and
is
then
converted
by
pyruvate
decarboxylase
into
acetaldehyde
and
CO2.
Acetaldehyde
is
then
reduced
to
ethanol
in
a
NAD
linked
reaction
involving
alcohol
dehydrogenase.
This
fermentation
is
a
major
pathway
in
some
yeasts
but
is
not
important
in
bacteria.
