Milk Powder


Milk Powder

Powdered milk is made by the removal of most of the water from milk so that the milk solids are accompanied by not more than 5%, perhaps as little as 2% -moisture. Water is removed in two stages.

In the first stage the milk is concentrated by vacuum evaporation to about one-third of its original value. In the second stage the milk is dried, usually on a roll drier or in a spray drier.


Three classes of milk powder are recognised by P. F. A. Act. They are milk powder, skimmed milk powder, and partially, skimmed milk powder.

The principal differences are in their final composition, and are influenced by the class of milk which is dried.
